Amaranth: Grow Your Own
https://www.askaprepper.com/amaranth-superfood-storing-and-using-it-for-surviva
There are also ancient staples that have lost their place in the hierarchy of needs. Amaranth is one such grain. Amaranth lost its place to things like wheat and corn but this superfood was on the top of the heap for much longer than it has been buried by commercial agriculture. It’s a plant native to Southern US states and even further south. This means that amaranth is used to those hot summers. It is also a very drought tolerant plant. You can sow seeds directly but you need to wait till there is no chance of frost. Amaranth is not a wide bushy plant and that is great. Because of this, you can get away with tight plantings. Look for about 10”-18” of spacing between plants. http://www.heirloom-organics.com/guide/va/guidetogrowingamaranth.html
Anti-inflammatory Foods
Bok Choy
Also known as Chinese cabbage, bok choy is an excellent source of antioxidant vitamins and minerals which help fight infections caused by elevated white blood counts. In fact, recent studies show that there are over 70 antioxidant phenolic substances in bok choy. These include something called hydroxycinnamic acids, which are robust antioxidants that scavenge free radicals.
A deep green leafy vegetable that resembles Romaine lettuce on top and a large celery on the bottom, bok choy is more closely related to cabbage. The entire vegetable can be used, and is often added raw to salads for a satisfying crunch. In soups, the leaves and stalks should be chopped and added separately, since the stalks take longer to cook.

https://www.allrecipes.com/recipes/17172/fruits-and-vegetables/vegetables/bok-choy/?page=2
Blueberries
One antioxidant in particular stands out as an especially strong anti-inflammatory, and that’s quercetin. Found in citrus, olive oil and dark-colored berries, quercetin is a flavonoid (a beneficial substance or phytonutrient that’s prevalent in fresh foods) that fights inflammation and even cancer.
A recent study found that consuming more blueberries slowed cognitive decline and improved memory and motor function. The scientists in this study believed these results were due to the antioxidants in blueberries protective the body from oxidative stress and reducing inflammation.
Fruits and veggies Go for variety and lots of color. Research has shown that vitamin K-rich leafy greens like spinach and kale curb inflammation, as does broccoli and cabbage. And the substance that gives fruits like cherries, raspberries, and blackberries their color is a type of pigment that also helps fight inflammation.
Beans
They're high in fiber, plus they're loaded with antioxidants and other anti-inflammatory substances.
Fried Foods are BAD
Cooking foods in vegetable oil doesn't make them healthy. Corn, safflower, and other vegetable oils all have omega-6 fatty acids. You need some omega-6s, but if you get too much, as most Americans do, you throw off the balance between omega-6s and omega-3s in your body and end up with -- you guessed it -- more inflammation.
Culinary Tips
How to replace sugar with splenda
When substituting SPLENDA® Sugar Blend for sugar in recipes, use half the amount of SPLENDA®Sugar Blend as you would sugar. Remember, one-half cup of SPLENDA® Sugar Blend has the sweetness of 1 cup of sugar. This includes recipes for pie fillings, custards, puddings, cheesecake or meat marinades.
Heavy Cream Substitute https://www.thespruceeats.com/heavy-cream-substitute-4154289
This substitute will not whip, so you'll be deeply disappointed if you try to use it to make ice cream or whipped cream.
Use in sauces, casseroles, and soups.
Store Fresh Herbs https://www.thespruceeats.com/best-way-to-store-fresh-herbs-last-longer-4688314
What is Quinoa? https://www.thespruceeats.com/what-is-quinoa-p2-1328448
Blend Better
Always put your liquids in your blender first—water, juice, broths—and then load your more solid ingredients—veggies, leafy greens, fruits. This takes stress off your blender motor, and as the blade spins your ingredients are more easily pulled down into the blender vessel and your blends are more consistent, smooth, and creamy.
Let Meat Sit Out Before Cooking
If you’re going to cook a steak, for instance, take it out of your fridge and let it come to room temperature before you throw it on the grill or in the oven. This helps the meat cook easier and prevents cold spots in the center.
Don't Cry Over Onions
Put onions in ice water for 10 minutes before cutting them; this prevents them from causing your eyes to water.
Dry Herbs in the microwave
If you've ever purchased and used fresh herbs, you know that it's hard to use up the entire batch before it goes bad. Learn how to save money by drying fresh herbs in a microwave. (https://www.health.com/health/video/0,,20811109,00.html)
Add Butter to Your Sauces
Next time you're making a sauce, try adding a few pats of cold butter at the very end to add richness and shine.
If Your Food Taste Flat
A squeeze of lemon juice or a dash of wine cuts through fat, brightens flavors, and wakes up flat dishes. Just like salt and sugar, acid balances flavors
Brine Meats
Brining meat make it juicy, succulent, and bursting with flavor (and a brined meat is way more forgiving when overcooked).
Learn how to do it here.
Add baking soda to tomato sauce
If you don’t want to add sugar to a pot of marinara sauce but the tomatoes are a bit acidic, add a little baking soda. Simply stir 1/4 to 1/2 teaspoon into the pot and cook for a few minutes to take the bite out of the flavor.
Use an egg wash to make baked goods look irresistible.
Brush a light coating of egg wash (one yolk + 1 tablespoon heavy cream) over baked goods while they’re baking to give them a shiny golden brown hue.
Fat-Free Broth
Chill your meat or chicken broth. The fat will rise to the top, and you can remove it before using the broth.
Lumpy Gravy or Sauces
Sauces and gravies often have flour in them and if the flour is not sifted, it can make a sauce lumpy. If the damage has been done and you have clumps in your sauce, pour it into a blender and blend for just a few seconds to make it nice and smooth. Thicken gravies with milk or broth blended in the blender with flour. Be sure to cook long enough to remove the raw flour taste.
Pre-Soak Pasta
Soak the pasta in water in a sealed bag for a couple hours or overnight. Then you can cook it super super fast in boiling water or just add it straight to a hot sauce in a pan and let it finish cooking there.
Mushy Pasta
If this happens to you, put in ice water or run under cold water for a few minutes to stop the cooking process and contract the starch. Then reheat in tomato sauce—the acid will perk it up further. Another trick is to use that mushy pasta in a batch of minestrone or chicken soup, and no one will ever know.
Sticky Noodles
Drain and cool immediately. Then return the pasta to a sauté pan, add at least one tablespoon of olive oil, and toss while reheating.
Dried Out Chicken
If your chicken breasts were in the oven for just a bit too long and they’re all dried out, cut up the pieces, mix them with mayonnaise, chopped celery, dried fruit, and spices, and you have a flavorful chicken salad. Mayo can disguise the driest chicken and turn it into a masterpiece
Over-charred Beef
Rub it with a mix of ground pepper, chili powder, and garlic, then present as ‘blackened.’ Or slice it up as is and use in stir-fries, salads, or fajitas.
Revive Wilted Produce
As vegetables lose moisture, their cell walls start to sag. That’s what turns lettuce limp and carrots rubbery. Immersing them in water helps reverse the process. What to do: Fill a large bowl with cold water and ice, add the vegetables, and let them soak for 15 to 20 minutes. Dry thoroughly before using. This method works with fresh herbs and all sorts of vegetables (slice them first for maximum water absorption).
Caramelize Onions
Do it in half the time by adding a little baking soda.
Microwave Lemons or Limes to get more juice from them
Zapping citrus for 15 or 20 seconds helps break down carbohydrates in the fruit and encourages maximum liquidity. Or you can simply roll citrus on the counter using the palm of your hand to help release all of the juice pockets.
Peel tomatoes with ease
Cut an X in the top, and then simmer in a pot of hot water for 15 to 30 seconds. Cool down and the skin will fall right off.
Prevent butter from over-browning in your pan
Add a little bit of lemon juice.
Hardboil Eggs the Easy Way
For a great hardboiled egg every time, bring your pot to a boil and then turn off the heat. Let your eggs sit in the heated pot for 12 minutes and then transfer to cold water.
Buttermilk
If your recipe calls for buttermilk, you can use regular milk with lemon juice.
Greek Yogurt
Use Greek yogurt as a healthy substitute for mayo, sour cream, heavy cream and more.

In soups, the leaves and stalks should be chopped and added separately, since the stalks take longer to cook.
https://www.marthastewart.com/1502518/bok-choy-recipes
https://www.allrecipes.com/recipes/17172/fruits-and-vegetables/vegetables/bok-choy/?page=2
